With Ultra Brut 2018, the South African institution Graham Beck from the Western Cape reveals the absolute quintessence of its style. This classic Chardonnay and Pinot Noir blend shimmers with a delicate greenish hue in the glass and delivers pure precision and unadorned clarity. On the nose, the Cap Classique unfolds a wonderfully invigorating freshness of grated lemon zest, underpinned by fine notes of warm brioche. The result is a beautifully balanced interplay of invigorating citrus freshness and yeasty depth that immediately makes you want to take the first sip. On the palate, this sparkling wine is remarkably rich and complex, carried by a fine, creamy mousse. Crisp acidity of 8.3 g/l and a taut pH of 3.02 give it tremendous tension, which develops into an exceptionally focused and long finish with 4.7 g/l residual sugar and a lean 12.27% ABV. This is sophisticated sparkling wine for moments when you want to combine vibrant freshness with serious structure.
