With Ultra Brut 2018, the South African stalwart Graham Beck from the Western Cape captures the very essence of its style. The classic Chardonnay and Pinot Noir cuvée shimmers with a delicate green hue in the glass and delivers pure precision and unadorned clarity. On the nose, this Cap Classique reveals wonderfully invigorating freshness of grated lemon zest, underpinned by fine notes of warm brioche. The result is a beautifully balanced interplay of lively citrus freshness and yeasty depth that makes you eager for the first sip. On the palate, this sparkling wine is remarkably rich and complex, supported by a fine, creamy mousse. Crisp acidity of 8.3 g/l and a taut pH of 3.02 give it tremendous energy, leading, with 4.7 g/l residual sugar and a lean 12.27% ABV, into an exceptionally focused, long finish. This is sophisticated sparkling wine for moments when you want to combine vibrant freshness with serious structure.
