Waterkloof

The Winery Waterkloof is just 4.5 kilometers from the Atlantic, on the cool, coastal edge of the wine region Stellenbosch. Founded in 2005 by Paul Boutinot, who spent more than ten years searching for the ideal location for wines with natural balance. The vineyards cover nearly 100 hectares and are surrounded by another 100 hectares of biodiversity certified as a WWF Conservation Champion. The modern cellar sits enthroned on the Schapenberg and offers wide views over False Bay.

The philosophy of Winery Waterkloof is based on minimally invasive winemaking and regenerative agriculture. Since 2005, the grapes have been harvested with low yields of 1 to 4 tons per hectare, enabling high concentration and natural balance. In the cellar, additives are largely avoided, while wild yeasts initiate fermentation. Wines such as the Circle of Life, but also varietal classics like the outstanding Chenin Blanc from South Africa or a fine-mineral Sauvignon Blanc from South Africa, often mature for years in old French oak barrels.

The terroir is shaped by its proximity to the sea and cool sea breezes, creating a unique microclimate. Regenerative agriculture actively restores ecosystems, improves soil health, and promotes biodiversity. Half of the estate is a WWF Conservation Champion nature reserve that protects the biological diversity of the Cape Floristic Region .
