Waterkloof

The Waterkloof Winery is located just 4.5 kilometres from the Atlantic Ocean, on the cool, coastal edge of the Stellenbosch wine region. It was founded in 2005 by Paul Boutinot, who spent more than ten years searching for the ideal location for wines with natural balance. The vineyards cover just under 100 hectares and are surrounded by a further 100 hectares of WWF Conservation Champion-certified biodiversity. The modern winery sits atop Schapenberg, offering sweeping views across False Bay.

The philosophy of Waterkloof Winery is based on minimally interventionist winemaking and regenerative agriculture. Since 2005, grapes have been harvested at low yields of 1 to 4 tonnes per hectare, allowing for high concentration and natural balance. Additives are largely avoided in the cellar, while wild yeasts initiate fermentation. Wines such as Circle of Life, as well as classic single-varietal wines like the outstanding South African Chenin Blanc or a finely mineral South African Sauvignon Blanc, often mature for years in old French oak barrels.

The terroir is shaped by its proximity to the sea and cool breezes, which create a unique microclimate. Regenerative agriculture actively restores ecosystems, improves soil health and promotes biodiversity. Half the estate is a WWF Conservation Champion nature reserve that protects the biodiversity of the Cape Floristic Region .
