Its deep ruby hue hints at its complexity and refinement. This Bordeaux-style blend offers rich aromas of blackcurrant, ripe plum and dark cherry, woven with cedar, pencil shavings and cigar-box spice. Mocha, crushed violets and graphite add further intrigue. On the palate, black-fruit flavours are supported by finely integrated oak spice. Cabernet Sauvignon provides structure and intensity, Merlot lends a plush texture and generous fruit, while Cabernet Franc adds herbal complexity. Silky yet firm tannins lead to a long, layered finish with lingering notes of dark Chocolate, roasted coffee beans and spice. Enjoyable already in its youth, The Taberer will continue to develop over the next decade. Winemaking: Quality sorting continues in the cellar to ensure that only perfectly ripe berries are vinified. Fermentation in stainless-steel tanks over two weeks, with regular pump-overs, extracts vibrant colour and velvety tannins.
