Haute Cabrière
The renowned Winery Haute Cabrière is picturesquely situated on Franschhoek Pass Road, nestled among the imposing Franschhoek-Mountains. Since its founding in 1694, it has been known for its excellent sparkling wines in the Méthode Cap Classique-style. Much of the cellar is spectacularly carved into the rock, underscoring its deep connection to nature.
The Franschhoek region offers a unique terroir, ideal for producing elegant wines. Under the leadership of the von Arnim family, who have nurtured the winemaking tradition for generations, outstanding wines are produced here, such as the Chardonnay Pinot Noir.
Visitors can experience the spectacular sabrage ceremony every day, where bottles of sparkling wine are expertly opened. The Winery also houses a restaurant with panoramic views across the entire valley and offers a selection of wines, including fine Chardonnay and Pinot Noir varieties.
Translation missing: en.Tasting notes
The Pierre Jourdan's MCC Brut Magnum from Haute Cabrière Winery is an elegant Méthode Cap Classique, made using the traditional French method of bottle fermentation.
On the nose, Pierre Jourdan's MCC Brut reveals delicate yeasty aromas, complemented on the palate by fresh citrus and crisp acidity.
Haute Cabrière` s MCC Brut is made from a blend of the classic varieties Chardonnay and Pinot Noir.

Chardonnay & Pinot Noir
The blend of Chardonnay and Pinot Noir combines freshness with substance and is particularly well established as a sparkling wine . Chardonnay often contributes citrus and apple notes, lively acidity and a slender profile; Pinot Noir adds body, structure and sometimes delicate red fruit. Together, they create a balanced style that is both focused and substantial. The backbone of acidity and substance supports its aging potential; extended lees aging can add brioche and toasted notes.
This combination is classic in Champagne, and is also found in high-quality sparkling wines from other cool-climate regions, such as England. When made as a white wine, the blend is usually pale yellow to golden yellow; as a rosé, it is also a delicate pink. Despite its dark berry skins, Pinot Noir contributes little perceptible tanninwhen handled gently. The bubbles enhance freshness and texture; depending on how it is aged, the wine can be linear or creamy. It pairs well with fish, white meat and mild vegetable dishes.
