Cabernet Sauvignon and Shiraz
This cuvée combines the firm structure of Cabernet Sauvignon with the spicy richness of Shiraz. Cabernet Sauvignon often contributes blackcurrant, supporting acidity and firm tannins; Shiraz adds dark berries, body and often smoother-feeling tannins. The result is generally a powerful red wine whose fullness of fruit is given definition by acidity and tannins. The tannin structure of both varieties, together with sufficient acidity and fruit concentration, can support extended ageing. pepper, Körper und oft geschmeidiger wirkendes Tannin.
The combination is particularly well established in Australia, and is also produced in South Africa . In the glass, it typically appears deep ruby red to purple. Depending on the climate and Aged, the style ranges from juicy and fruit-forward to dense, spicy and oak-influenced; with age, tobacco and leather notes may develop. It pairs well with briefly seared or braised meat, as well as spicy vegetable dishes.
