This classic blend of Chardonnay and Pinot Noir brings pure elegance and youthful brilliance to the glass, with remarkable depth. On the nose, the sparkling wine opens with exceptional liveliness, revealing white peach, ripe pear, crisp Granny Smith apple and fresh lemon zest. Subtle, highly complex nuances of roasted nuts, buttery brioche and delicate spice notes emerge immediately afterwards. On the palate, the cuvée is wonderfully taut and vibrant: a pronounced acidity of 8.7 g/l and a focused pH of 3.09 meet beautifully fine, creamy bubbles. With a slender 12.49% ABV and perfectly balanced residual sugar of 5.4 g/l, the palate remains crystal-clear and lingers exceptionally long with invigorating freshness and noble spice. This exceptional Cap Classique is far too fine for a casual toast and proves itself a serious food partner in every respect.
