Haute Cabrière

The renowned Winery Haute Cabrière is picturesquely situated on Franschhoek Pass Road, nestled among the imposing Franschhoek-Mountains. Since its founding in 1694, it has been known for its excellent sparkling wines in the Méthode Cap Classique-style. Much of the cellar is spectacularly carved into the rock, underscoring its deep connection to nature.

The Franschhoek region offers a unique terroir, ideal for producing elegant wines. Under the leadership of the von Arnim family, who have nurtured the winemaking tradition for generations, outstanding wines are produced here, such as the Chardonnay Pinot Noir.

Visitors can experience the spectacular sabrage ceremony every day, where bottles of sparkling wine are expertly opened. The Winery also houses a restaurant with panoramic views across the entire valley and offers a selection of wines, including fine Chardonnay and Pinot Noir varieties.

Max & Moritz Favorite Wine

Unwooded Chardonnay 2025

Fresh and lively, with aromas of tropical fruit, red berries and lime. The wine is juicy and balanced on the palate, supported by fine acidity and a soft, approachable finish that lingers.

Pinot Noir and Chardonnay

In this classic sparkling wine cuvée, the structure and richness of Pinot Noir combine with the freshness and precision of Chardonnay. Pinot Noir contributes body, firm acidity and often hints of red berries ; Chardonnay adds citrus and apple , along with a crisp line of acidity. The result is a balance of substance and lightness. Gentle pressing helps keep tannins in the background. The structure and fruit concentration of Pinot Noir, together with the acidity of Chardonnay, can support the ageing potential .

The combination is particularly well established in Champagne, as well as in Crémant de Bourgogne. These wines are typically finely sparkling and can be fruit-forward or, with longer lees ageing, show notes of brioche and toast . In the glass, they are usually pale yellow to golden, or a delicate pink in rosé form. Their balance of freshness and body pairs well with fish, poultry and mild cheeses.

Winemaking

This rosé is inspired by the sparkling wine blends of France’s Champagne region, but does not undergo a second fermentation, resulting in a still wine with plenty of flavour. It is crafted to be elegant and approachable.
