Paserene
Paserene is a family-run boutique winery in Franschhoek, dedicated to producing high-quality luxury wines. The name Paserene derives from the Latin word Passeriformes, the order of “travelling and free” birds that includes swifts and swallows. This reflects the winery’s philosophy of creating wines with a distinct “sense of place and people”.
The winery places great importance on authentic wines and label artwork that will leave a lasting legacy for future generations. Its connection with nature is also reflected in the architectural design of the wine lounge, inspired by a swallow’s nest. This design aims to blend harmoniously into the landscape rather than compete with it.
The terroir of the Franschhoek wine region allows Paserene to produce award-winning wines such as the Elements Range. These wines embody the playful side of the winery and offer a unique experience. Paserene focuses on Chardonnay and red blends.
Tasting Note
Paserene Rosie is fresh, vibrant and elegant. The nose reveals intense aromas of crushed pomegranate, fresh strawberries and juicy watermelon. Playful notes of cotton candy and delicate candy floss lend the wine extra lightness, while grapefruit and fresh citrus zest provide an invigorating freshness. On the palate, this rosé impresses with its silky texture and perfectly balanced acidity. Its fruit-forward style is carried by ripe strawberry and watermelon flavours, harmoniously balanced by vibrant freshness. The finish is clean, refreshing and lingering.

Mourvèdre, Syrah, Malbec
This cuvée combines dark fruit, spice and a powerful structure. Syrah and Malbec often contribute blackberry, plum and violet notes, as well as intense colour; Mourvèdre often adds earthy, herbal and savoury accents. Syrah can be a particular source of peppery spice. Mourvèdre and Malbec contribute to tannin and body , while Syrah can support fresh acidity, depending on the site. How firm or supple the blend feels depends largely on ripeness, origin and ageing.
In the glass, the wine is usually deep ruby to purple, with a full-bodied, spicy palate. This combination has no clear-cut traditional home: Mourvèdre is particularly common in the Mediterranean , Syrah in the Rhône and South Africa, and Malbec in southwest France and Argentina. Styles can range from fruit-forward to firmly structured and oak-influenced. It pairs well with seared or braised meat and hearty vegetable dishes.
