South Africa’s sparkling wine icon Graham Beck demonstrates with Allure from the Western Cape just how invigorating alcohol-free enjoyment can be. The hand-picked Pinot Noir and Chardonnay grapes, harvested from mid-January to early February, are pressed as whole bunches, matured on the lees in stainless steel tanks for three months and gently dealcoholised to 0.28% vol. using a vacuum spinning cone. The result is a surprisingly precise sparkling wine with a fine 4.5 bar of pressure, made from grapes grown at different elevations and across diverse terroirs. On the nose, a floral bouquet immediately conveys freshness. You’ll detect red apple, pomegranate, ripe apricot and juicy peach, beautifully underpinned by a delicate hint of soft caramel. On the palate, the harmonious interplay of taut 7.5 g/l acidity, a cool pH of 2.96 and 23.8 g/l residual sweetness creates a lively mouthfeel. Yellow stone fruit blends with a lime-like freshness and juicy texture, carried by fine bubbles through to the crisp finish.
