With massive rock formations on all sides and very diverse soils in the vineyards, the terroir of Franschhoek is undoubtedly distinctive. The history of the winery Haute Cabrière dates back to 1694. At Haute Cabrière, there is a strong focus on the approach of minimal intervention in viticulture. Therefore, extremely gentle cellar practices are used to present the terroir. This is combined with a passion for innovation to offer the best possible quality. Haute Cabrière is especially known for its excellent Méthode Cap Classiques at Champagne level. The unforgettable view over the Franschhoek Valley completes the experience.
Tasting notes
The Unwooded Chardonnay from Winery Haute Cabrière is characterized by a balanced complexity as well as intense fruit aromas. On the nose and palate, pronounced fresh citrus notes as well as aromas of green apple and pear are evident. A long and elegant finish is supported by a gentle acidity and fine tannins.
The barrels made of French oak, which have been treated using the water bending method, prepare the oak wood for toasting in such a way that a softer mouthfeel arises when tasting the Unwooded Chardonnay from Haute Cabrière.
Grape Variety
Chenin Blanc is a widely cultivated, old white wine grape variety that has been grown in France (in Anjou – Touraine) since the 9th century. Compared to other white wine grape varieties, this variety is very productive. This leads to a very high quality of the white wine when reduced on the vine.
In South Africa, Chenin Blanc is the most widely grown white wine grape variety. The reason for this is primarily the very high diversity. For example, there are "wild-growing" vines (so-called Bush Vines) that are usually not irrigated. For this reason, the vines penetrate very deep into the ground with their roots to reach water. These Chenin Blancs therefore have a stronger depth and complexity.
The grape variety can also be aged very fresh and fruity in stainless steel tanks, developing into a very nice summer wine. Through the Aged in oak barrels, one obtains very complex and full-bodied white wines. The aromas of Chenin Blanc wines range from peach, apricot, and tropical fruits to honey and melon.
