South African sparkling wine icon Graham Beck shows with Allure from the Western Cape just how invigorating alcohol-free enjoyment can be. Hand-picked from mid-January to early February, the Pinot Noir and Chardonnay grapes are pressed as whole bunches, aged on lees in stainless steel tanks for three months, then gently dealcoholised to 0.28% ABV using a vacuum spinning cone. The result is a surprisingly precise sparkling wine with fine 4.5-bar pressure, made from grapes grown at different elevations and across various terroirs. On the nose, a floral bouquet greets you with an immediate sense of freshness. You’ll smell red apple, pomegranate, ripe apricot and juicy peach, beautifully complemented by a subtle hint of delicate caramel. On the palate, the harmonious interplay of crisp acidity at 7.5 g/l, a cool pH of 2.96 and 23.8 g/l residual sugar creates a lively mouthfeel. Yellow stone fruit melds with lime-like freshness and a juicy texture, accompanied by fine bubbles through to a crisp finish.
