Paserene Wine Farm is located in Franschhoek and ranks among the most exciting boutique wineries in South Africa. The winery was founded by winemaker Martin Smith and entrepreneur Ndavhe Mareda with the vision of producing elegant, terroir-driven wines at the highest level.
The name 'Paserene' derives from Passeriformes From Passeriformes, the order of free-roaming birds, and stands for freedom, elegance, and character. This philosophy is also reflected in the wines: precise, expressive, and vinified with minimal intervention.
The grapes come from selected vineyards in Franschhoek, Elgin and Tulbagh. This results in wines with exceptional depth, freshness and complexity. Paserene is particularly known for its high-quality Bordeaux blends as well as elegant Chardonnay and Sauvignon Blanc wines.
Architecturally, the Winery also impresses with a modern Tasting Lounge and a spectacular view of the mountains of Franschhoek. A place that perfectly combines luxury, tranquility and South African wine passion.
Tasting Notes
The Paserene Marathon impresses with depth, structure and exceptional elegance. On the nose, intense aromas of cassis, blackcurrants and dark forest berries unfold, accompanied by dried flowers, black pepper and fine allspice. Notes of cedarwood, vanilla and balsamic nuances give the wine additional complexity. On the palate, the Marathon appears powerful and full-bodied, yet precise and harmoniously balanced. The silky tannins are perfectly integrated and carry the concentrated dark fruit through to the long, elegant finish. Spicy and mineral accents provide additional depth and enormous aging potential.
Grape Variety
Chenin Blanc is a widely cultivated, old white wine grape variety that has been grown in France (in Anjou – Touraine) since the 9th century. Compared to other white wine grape varieties, this variety is very productive. This leads to a very high quality of the white wine when reduced on the vine.
In South Africa, Chenin Blanc is the most widely grown white wine grape variety. The reason for this is primarily the very high diversity. For example, there are "wild-growing" vines (so-called Bush Vines) that are usually not irrigated. For this reason, the vines penetrate very deep into the ground with their roots to reach water. These Chenin Blancs therefore have a stronger depth and complexity.
The grape variety can also be aged very fresh and fruity in stainless steel tanks, developing into a very nice summer wine. Through the Aged in oak barrels, one obtains very complex and full-bodied white wines. The aromas of Chenin Blanc wines range from peach, apricot, and tropical fruits to honey and melon.
