Located on the spectacular Helshoogte Pass in Stellenbosch, Thelema Mountain Vineyards is the family Winery and the home of Thelema and Sutherland Vineyards Wines. On the 42 hectares of vineyards, Cabernet Sauvignon, Merlot, as well as Chardonnay and Sauvignon Blanc are cultivated. The world-renowned wines of Thelema surprise with pronounced elegance and wonderful fruitiness. Thelema enjoys an optimal climate and has excellent soil types, which have established the Winery as one of the leading producers of Cabernet Sauvignon and firmly anchored Stellenbosch Cabernets on the global wine map. Due to the excellent conditions, Thelema works with minimal intervention in the vineyard and lets the naturalness of the wines speak for themselves. Extremely successful, we find!
Tasting notes
The Mint Cabernet Sauvignon from the Winery Thelema is a true wine journey for the senses.
On the first sniff it reveals a seductive bouquet of mint, seemingly inspired by the surrounding eucalyptus trees. This refreshing mint note weaves elegantly with deep, enticing aromas of dark berries and a subtle chocolate note.
The first sip confirms the exceptional quality of this wine. The mint continues delicately and blends harmoniously with the juicy berry flavors that gently caress the palate. The wine shows a remarkable intensity, stemming from its 18-month maturation in barrique barrels.
What sets this wine apart is undoubtedly its unique "mint" character, inspired by the eucalyptus trees surrounding the vineyard. This eucalyptol gives it a distinctive note that is absorbed from the berry skins during fermentation.
Grape Variety
Chenin Blanc is a widely cultivated, old white wine grape variety that has been grown in France (in Anjou – Touraine) since the 9th century. Compared to other white wine grape varieties, this variety is very productive. This leads to a very high quality of the white wine when reduced on the vine.
In South Africa, Chenin Blanc is the most widely grown white wine grape variety. The reason for this is primarily the very high diversity. For example, there are "wild-growing" vines (so-called Bush Vines) that are usually not irrigated. For this reason, the vines penetrate very deep into the ground with their roots to reach water. These Chenin Blancs therefore have a stronger depth and complexity.
The grape variety can also be aged very fresh and fruity in stainless steel tanks, developing into a very nice summer wine. Through the Aged in oak barrels, one obtains very complex and full-bodied white wines. The aromas of Chenin Blanc wines range from peach, apricot, and tropical fruits to honey and melon.
