Haute Cabrière
The renowned Winery Haute Cabrière is picturesquely situated on Franschhoek Pass Road, nestled among the imposing Franschhoek-Mountains. Since its founding in 1694, it has been known for its excellent sparkling wines in the Méthode Cap Classique-style. Much of the cellar is spectacularly carved into the rock, underscoring its deep connection to nature.
The Franschhoek region offers a unique terroir, ideal for producing elegant wines. Under the leadership of the von Arnim family, who have nurtured the winemaking tradition for generations, outstanding wines are produced here, such as the Chardonnay Pinot Noir.
Visitors can experience the spectacular sabrage ceremony every day, where bottles of sparkling wine are expertly opened. The Winery also houses a restaurant with panoramic views across the entire valley and offers a selection of wines, including fine Chardonnay and Pinot Noir varieties.
Haute Cabrière impressively shows just how elegantly Pinot Noir can be made into a rosé. The glass offers freshly picked wild strawberries and juicy grapefruit, underpinned by delicate herbal spice.
On the palate, ripe berry fruit meets crisp, fresh acidity and a lean body. The texture is firm, leading straight into a cool, wonderfully mineral finish.
This is your companion for balmy summer evenings, when easy drinking and freshness are called for. It offers pure, uncomplicated enjoyment and pairs beautifully with grilled salmon, crisp salads or fresh goat’s cheese.

Pinot Noir
The Pinot Noir, also known as Spätburgunder, is one of the world’s noblest and most demanding red wine grape varieties. It is distinguished by its pale ruby-red to brick-red colour . The bouquet is complex, with aromas of red berries such as cherry, raspberry and strawberry, often complemented by spicy notes, earthy tones or hints of forest floor with age. The wines are generally elegant, medium-bodied wines , but they can also be powerful and complex.
Typical growing regions include the French Burgundy, as well as Germany, Oregon, California and South Africa, all of which produce outstanding Pinot Noir. Styles range from fruit-forward and fresh to complex and mature, often refined through barrel ageing, which can contribute notes of vanilla or roasted coffee.
Pinot Noir offers a fine balance of fruit and acidity and is a versatile food pairing choice. It pairs well with poultry, mushroom dishes, white meat and mild cheese.
