Waterkloof

The Bodega Waterkloof is located just 4.5 kilometers from the Atlantic on the cool, coastal edge of the wine region Stellenbosch. It was founded in 2005 by Paul Boutinot, who spent more than ten years searching for the ideal location for wines with natural balance. The vineyards cover just under 100 hectares and are surrounded by a further 100 hectares of biodiversity that is certified as WWF Conservation Champion. The modern winery sits atop Schapenberg and offers wide views across False Bay.

Its philosophy of Bodega Waterkloof is based on minimally invasive winemaking and regenerative farming. Since 2005, the grapes have been harvested at low yields of 1 to 4 tonnes per hectare, enabling high concentration and natural balance. In the cellar, additives are largely avoided, while wild yeasts start the fermentation. Wines such as the Circle of Life, as well as varietal classics like the outstanding Chenin Blanc from South Africa or an elegantly mineral Sauvignon Blanc from South Africaoften mature for years in old French oak barrels.

The terroir is shaped by its proximity to the sea and cool sea breezes, creating a unique microclimate. Regenerative farming actively restores ecosystems, improves soil health and supports biodiversity. Half of the estate is a WWF Conservation Champion protected natural area that safeguards the biodiversity of the Cape Floristic Region .
